Egg & Sausage Tater Tot Breakfast Casserole

A super easy meal to throw together for a crowd!

Equipment

  • 1 9x13 baking dish
  • 1 handmixer
  • 1 cast iron pan
  • 1 wooden spatula or spoon

Ingredients

  • 2 lbs ground sausage
  • 16 medium eggs
  • 3 cups heavy cream
  • 3 cups cheddar cheese shredded
  • 48 oz frozen tater tots

Instructions

  • Preheat oven to 375 degrees Fahrenheit
  • Spray or butter 9x13 pan
  • Cook ground sausage on medium heat until browned
  • Crack open 16 eggs in to a bowl, add 3 cups of heavy cream and mix until incorporated
  • Line 9x13 with tater tots until bottom layer is full
  • Top tater tots with cooked ground sausage
  • Top sausage with shredded cheddar cheese
  • Top with egg and heavy cream mixture
  • Cover casserole dish with foil
  • Bake casserole for 40-50 minutes, check to make sure center is fully cooked
  • Serve with sour cream, plain greek yogurt, salsa, etc

Notes

  1. You can add veggies to this if you would like. Simply sauté them after the sausage is cooked. Add in ideas include: bell peppers, onions, spinach, etc.
  2. You can make this the night before and bake the day off. Simply refrigerate overnight.
