Egg and Sausage Tater Tot Breakfast Casserole

Want a simple yet filling meal to serve your family in the morning? Try this breakfast casserole! It is really so easy to make, and you can even pre-make it the night before!

What is breakfast casserole made of?

There are so many ways to make a delicious breakfast casserole. In this specific recipe I give you the simple base of tater tots, eggs, sausage and cheese. You could easily add mix ins like onions, bell peppers, spinach or more. I like to top with sour cream, salsa or hot sauce.

How can I feed breakfast to a crowd?

Breakfast Casserole of course! This is such an easy way to feed a lot of people. You can easily double or triple the recipe to make more depending on the size of your crowd. I love that you have the option to make this dish the night before and throw it in the oven the day of the event.

What if my kids are picky?

Casseroles are so versatile! Simply swap the sausage for any meat your kids prefer. You can eliminate the tater tots altogether if needed. Choose to add vegetables your kiddos like or go without. Make it what your family likes!

What are some good meat swaps?

Swapping the sausage out is easy. You can swap it for bacon, ham, steak, or really any meat. Sausage, bacon and ham are usually the most common for breakfast food. Don’t want meat? No problem, simply omit it.

What supplies do I need?

  1. a hand mixer makes it easier to scramble the eggs, don’t have one? Use a whisk or fork and do it by hand.
  2. a baking dish, size 9×13, ceramic or glass is best.
  3. a pan to cook your meat and saute your veggies, cast iron is best.
  4. a utensil to mix your meat and veggies, I prefer wooden.

What ingredients do I need?

  1. 2lbs sausage, or meat of choice
  2. 16 eggs
  3. 48 oz frozen tater tots or cooked cubed potatoes
  4. 3 cups heavy cream
  5. 3 cups shredded cheese
  6. veggies of your choice, optional

Instructions

  1. Preheat oven to 375 degrees Fahrenheit 
  2. Spray or butter 9×13 pan
  3. Cook ground sausage on medium heat until browned
  4. Crack open 16 eggs in to a bowl, add 3 cups of heavy cream and mix until incorporated
  5. Line 9×13 with tater tots until bottom layer is full
  6. Top tater tots with cooked ground sausage
  7. Top sausage with shredded cheddar cheese
  8. Top with egg and heavy cream mixture
  9. Cover casserole dish with foil
  10. Bake casserole for 40-50 minutes, check to make sure center is fully cooked
  11. Serve with sour cream, plain greek yogurt, salsa, etc

  • 1 9×13 baking dish

Notes

  1. You can add veggies to this if you would like. Simply sauté them after the sausage is cooked. Add in ideas include: bell peppers, onions, spinach, etc.
  2. You can make this the night before and bake the day off. Simply refrigerate overnight.
