Sourdough Discard Cracker Recipe

Sourdough discard, please do not discard! There are so many delicious foods you can make with the discard. Here’s an easy and flavorful sourdough discard cracker recipe—a great way to use up your discard and create a crispy snack.

Ingredients:

• 1 cup sourdough discard (about 240g, unfed)

• ½ cup all-purpose flour (or whole wheat flour for a nuttier flavor)

• 2 tablespoons olive oil (or melted butter)

• ½ teaspoon salt (plus more for sprinkling)

• Optional flavorings:

• Herbs (e.g., rosemary, thyme, oregano)

• Spices (e.g., garlic powder, paprika)

• Grated Parmesan cheese

• Sesame seeds or flaxseeds

Instructions:

1. Preheat the Oven

• Preheat your oven to 325°F (160°C).

• Line a baking sheet with parchment paper or a silicone baking mat.

2. Mix the Dough

1. In a medium bowl, combine the sourdough discard, flour, olive oil, and salt.

2. Mix until a soft, slightly sticky dough forms. Add a little more flour if the dough is too wet.

3. Roll Out the Dough

1. Place the dough on a floured surface or between two sheets of parchment paper.

2. Roll it out as thin as possible (about 1/16 inch thick) for crispy crackers.

4. Add Toppings

1. Sprinkle the dough with your desired toppings (e.g., herbs, spices, seeds, or cheese).

2. Press the toppings gently into the dough with your rolling pin.

5. Cut the Crackers

• Use a pizza cutter, sharp knife, or cookie cutter to cut the dough into your desired cracker shapes. Squares or rectangles are quick and easy.

6. Bake

1. Transfer the crackers to the prepared baking sheet.

2. Bake for 20–25 minutes, or until the edges are golden and the crackers are crisp. Watch closely toward the end to avoid burning.

7. Cool and Store

• Let the crackers cool completely on a wire rack. They’ll crisp up further as they cool.

• Store in an airtight container for up to 1 week.

Tips:

• Thinner Dough = Crispier Crackers: Roll the dough as thin as you can for the best texture.

• Flavor Pairings: Serve with dips like hummus, cheese, or spreads for added flavor.

• Double the Batch: These are so tasty, you’ll want extras!
