Sourdough Discard Muffin Recipe

Around here, there is no such thing as discard. I repeat DO NOT DISCARD! There are so many uses for discard, and this recipe will show you how to use it in delicious muffins!

Here’s a simple and flavorful sourdough discard muffin recipe—perfect for breakfast or a snack!

Ingredients (Makes about 12 muffins):

• 1 cup sourdough discard (about 240g, unfed)

• 1 cup all-purpose flour (or a mix of all-purpose and whole wheat)

• 1 teaspoon baking soda

• 1 teaspoon baking powder

• ½ teaspoon salt

• ½ teaspoon cinnamon (optional, for flavor)

• ½ cup sugar (or brown sugar for a richer flavor)

• 1 large egg

• ½ cup milk (or a milk alternative)

• ¼ cup melted butter (or neutral oil)

• 1 teaspoon vanilla extract

• Optional add-ins:

• 1 cup blueberries, chocolate chips, chopped nuts, or diced apples

Instructions:

1. Preheat the Oven

• Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the cups.

2. Mix Dry Ingredients

1. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).

3. Mix Wet Ingredients

1. In a separate bowl, whisk the sourdough discard, sugar, egg, milk, melted butter, and vanilla extract until smooth.

4. Combine Wet and Dry Ingredients

1. Gradually fold the wet ingredients into the dry ingredients. Mix gently until just combined—do not overmix.

2. If using add-ins (e.g., blueberries or chocolate chips), gently fold them into the batter.

5. Fill the Muffin Cups

• Divide the batter evenly among the muffin cups, filling each about ¾ full.

6. Bake

1. Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

2. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Tips:

• Flavor Variations: Add lemon zest for blueberry muffins or cocoa powder for chocolate muffins.

• Storage: Store muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.

• Topping Ideas: Sprinkle coarse sugar or streusel topping on the batter before baking for added texture and sweetness.
